Ingredients

small zucchini
sliced thinly, about ? - ¼ thick

all-purpose flour

teaspoons
paprika

teaspoon

pepper

from 8 oz box panko breadcrumbs

finely grated parmesan cheese

eggs

Instructions
Slice the zucchini into ? - ¼ inch thick chips, using a mandolin slicer gives you uniform thickness and allows even cooking.

Flour, salt & pepper, and paprika. Mix together
Eggs, beaten
Breadcrumbs or crushed pork rinds and parmesan cheese
Preheat air fryer at 400F for 5 minutes
Dip the zucchini in the flour mixture, then egg, and then the breadcrumbs and place on a baking rack.
Add a single layer of breaded zucchini chips in the bottom of the air fryer basket, spray with vegetable oil.
Fry at 400F for 6-8 minutes, flip at 4 minutes .
Cook until chips are browned and crispy
Add any additional salt or pepper to taste
Serve immediately
Store leftovers in refrigerator in airtight container
